Recipes: Bulls-Eyes and Doughnut Balls

This recipe has been around for decades, possibly centuries. Bulls-eyes are incredibly easy to make, so much fun and will leave your child begging for more. Best of all, it's healthy, cheap, and protein packed!

Bulls-eyes

-8 slices of bread
-6 eggs
-2 tbsp milk
-butter

1. Heat a skillet, pan or griddle to medium heat.
2. Using a round cookie cutter (I don't have a small enough one so I use my stainless steel ¼ cup measuring cup), cut a small circle in each slice of bread. (save the cut-out for another easy recipe below.
3. Beat eggs and milk together.
4. Butter both sides of the bread, place in skillet. Carefully pour egg mixture into the circle hole until egg mixture is almost at the top of the cut-out. Cook for 2 minutes.
5. Flip Bulls-eye and continue cooking for 2 minutes.

DONE! We serve our bulls-eyes with fresh fruit, oatmeal and a cup of orange juice for a well rounded breakfast that hits almost every inch of the food pyramid!

Now, about those circles of bread...

Cinnamon Sugar Doughnut Balls

-8 circle cut-outs from Bulls-eyes OR slices of bread with the crust trimmed off.
-oil of choice for frying (we use Canola)
-1 tbsp cinnamon
-½ cup of sugar

1. Heat approximately ½ inch of oil in a saucepan or fry pan over medium-high heat until oil pops when a drop of water is added.
2. Combine cinnamon and sugar in a small bowl or lunch size paper bag.
3. Roll bread into individual balls.
4. Drop balls into heated oil and fry for 1-2 minutes, stirring them constantly.
5. Remove from oil and lightly drain.
6. Coat each doughnut ball in the cinnamon-sugar mixture by rolling them in a bowl or shaking them in a paper bag. (I prefer the paper bag method but if you don't have a bag the bowl works too!)

Serve hot.

What a great idea to knock out two great dishes from good ole bread!

I've never heard "Bulls Eye" we call them "Toad in the Hole" which was an adaptation my mom made (though I know she didn't make it up) of the English dish since I didn't like sausage. I make those once a week for the kids.
