In the famous words of Rachael Ray... YUM-O! This is a dish that even non-vegetarians can appreciate! Feeds 4 people. Each serving is 370 calories for the calorie counters in the world.
Cucumber Spinach Salad
Grab these:
-1 cucumber
-1 lb. fresh spinach
-salt
-2 tbsp. roasted salted peanuts
-2 fresh red Fresno chiles
-2 tbsp fresh lime juice
-1 tsp. sugar
-2 tsp. sesame oil
Do this:
1. rinse cucumber, peel partially- lengthwise in a striped pattern. Thinly slice.
2. sort spinach removing wilts and thick stems. Rinse several times in cold water. Place into a small amount of boiling, salted water. Cover and simmer for 2 minutes. Drain, rinse under cold water and drain again.
3. finely chop peanuts.
4. Rinse chiles & discard stems. Mince chiles & mix with lime juice, sugar, and sesame oil. Stir in peanuts and combine with spinach and cucumbers. Cover until ready to serve.
Corn Fritters
Grab these:
-2 and 1/2 cups of canned corn
-5 green onions
-2 fresh Fresno chiles
-1 piece ginger (1/2 inch section)
-4 sprigs fresh cilantro
-3 eggs
-2 tbsp flour
-salt
-1/4 cup oil
Do this:
1. drain corn, rinse under cold water, then chop coarsely.
2. Remove roots and any dark green or wilted parts of the green onions. Rinse and finely chop.
3. Rinse chiles, discard stems and mince the rest.
4. Peel ginger and mince or grate.
5. Rinse cilantro, shake dry, discard stems, and finely chop leaves.
6. Combine corn, onions, ginger, chiles, and cilantro in bowl. Add eggs, flour and salt. Stir well briefly but enough to combine.
7. Heat oil in large non-stick pan. Dip a spoonful of corn mixture into pan and press flatter. Fry on each side for 3 minutes or until golden brown.
Tip: if all of the fritters won't fit in your pain preheat your oven to 170 degrees and keep the finished fritters in the oven.
