Tuna Cups (Recipe)

I've gotten some great email feedback about the Shrimp Dogs! So glad everyone is enjoying them. This sneaky little recipe will have your little ones begging for more! Best of all, you can feed your family for a nutritious meal for close to nothing and it has (a few) hidden veggies!

Tasty Tuna Cups

Shopping List:
-2 cans chunk light tuna (in water) drained
-1 can homemade style biscuits (our choice: Pillsbury's new Simply Biscuits)
-1/2 cup of shredded colby jack cheese
-1/4 cup of mayonnaise
-2 tbsp spicy brown mustard
-2 tbsp finely diced celery
-2 tbsp finely diced carrots
-cracked black pepper & salt to taste
-1/2 cup of shredded colby jack* (this 1/2 will be reserved for the tops of each cup)

Directions:
Preheat oven per the biscuits instructions. Lightly grease 10 muffin cups. Gently press one biscuit and form it to the muffin cup. Stir remaining ingredients in a medium bowl until mixed. Be careful not to over stir or your tuna will get creamy instead of flaky. Spoon mixture into biscuit cups. Sprinkle with remaining cheese. Bake according to biscuits instructions.
