Sorry this is going up late today! It's been a wild day. We are still preparing our lawn for the bermuda seed during every free second we can squeeze out of the weekend! More details to come on the lawn adventure. For now, here is the menu!
April 10-16 Dinners
Sunday: Baked Lemon Cod fish with butter peas and mashed honey sweet potatoes
Monday: Black Bean Quinoa with homemade tortilla chips
Tuesday: Crustless Broccoli Quiche with fruit salad
Wednesday: Cheat Night
Thursday: Shrimp Pesto and a garden salad
Friday: Loaded Waffles and eggs*
Saturday: Garden Burgers with roasted Rosemary Potato Wedges
*Side note about the eggs: we recently started buying eggs from one of Ryan's co-workers whom owns 20 hens. Incredible eggs!! We usually pay $4 for one dozen organic, free range eggs but now we are paying $2 and getting a better quality egg. I can't get over how fresh and rich these eggs are... kinda makes me want a couple chickens. {Insert husband panic here.}

So, I would love to hear more about the black bean quinoa and...what are loaded waffles? :) Waffles aren't really on our menu just yet b/c we have to navigate through cooked egg (in baked goods) with Aiden before moving onto something like pancakes/waffles (just recently given the ok to slowly start giving him some, after a semi-successful food challenge), but we're hoping to be there soon! Sounds interesting!
And what a great deal with the eggs. That's awesome!
Oh my gosh, the black bean quinoa is so incredibly easy to make.
2 cups of black beans (or 1 can), rinsed and drained
1 cup chopped cilantro
1 cup vegetable broth
2 cups quinoa
2 tbsp cumin
1 tbsp of chili powder
1 cup of cooked corn
Boil vegetable broth, add quinoa and simmer over low covered for 15 minutes. In a wok heat 1 tbsp of olive oil. Add all of the above ingredients (start with black beans and corn) sautee and until thoroughly heated. Delish with tortilla chips, especially homemade ones.
Loaded Waffles are just homemade belgian waffles piled high with fruit. We usually use bananas, strawberries and blueberries. Top with whipped cream and skip the syrup. YUMMY!
